The BEST chocolate cake and frosting

WOW... it's been a long time since anyone has posted on here!  I actually
have quite a few good recipes, I'll try to share.  Alot of
yummy healthy ones too!

But here is a classic one that I love and thought I had on here, but I didnt.
If you love some yourself some chocolate cake, this certainly won't disappoint!

I honestly can't remember where I found it, sorry to whoever's recipe it is for not giving you credit, but it's really really yummy!  I want to say it was in LDS living magazine???

The BEST Chocolate Cake and CUPCAKES!

 sift together:
3 c. flour
2 c. sugar
1 tsp. salt
2 tsp. baking soda
1/2 c. baking cocoa

slowly add:
2 c. cold water
3/4 c. vegetable oil (I use Canola . . . it’s healthier)
2 Tb. white vinegar
2 tsp. vanilla

Pour into 9×13 pan – cook at 350* for 30-35 mins (depending on your oven & altitude, it can take even longer than 35 mins. Poke the middle with a toothpick & if it comes out clean, the cake is done).

This recipe also makes great cupcakes (just cook for 15-18 mins) or two cake rounds (cook time will be similar to that of a box cake).

Perfectly Perfect Chocolate Frosting

1/2 cup (1 stick) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Blackberry Filling

Yummy Chocolate cake

This really is good, so yummy as cupcakes and it's egg-less :)

The BEST Chocolate Cake
 sift together:
3 c. flour
2 c. sugar
1 tsp. salt
2 tsp. baking soda
1/2 c. baking cocoa

slowly add:
2 c. cold water
3/4 c. vegetable oil (I use Canola . . . it’s healthier)
2 Tb. white vinegar
2 tsp. vanilla

Pour into 9×13 pan – cook at 350* for 30-35 mins (depending on your oven & altitude, it can take even longer than 35 mins. Poke the middle with a toothpick & if it comes out clean, the cake is done).
I let it cool for about 30 mins and then frost it with an entire can of milk chocolate frosting from the grocery store.  I frost it while it’s still a little warm & the frosting melts into the cake.
This recipe also makes great cupcakes (just cook for 15-18 mins) or two cake rounds (cook time will be similar to that of a box cake).

"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING

2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Perfect Pie Crust

I will tell you this much, I never made a pie from scratch...never!  But Chad's been begging since we got married so I did it last night and it was SO good!  This is an awesome recipe!  I made it with a variation of her blackberry pie (I did blueberries and blackberries... YUM!!! )

 (Recipe from Simply Recipes)

All Butter Crust for Sweet and Savory Pies (Pâte Brisée)

  • 2 1/2 cups all-purpose flour, plus extra for rolling
  • 1 cup (2 sticks or 8 ounces) unsalted butter, very-cold, cut into 1/2 inch cubes
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 6 to 8 Tbsp ice water

Method

1 Cut the sticks of butter into 1/2-inch cubes and place in the freezer for 15 minutes to an hour (the longer the better) so that they become thoroughly chilled.
2 Combine flour, salt, and sugar in a food processor; pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add ice water 1 Tbsp at a time, pulsing until mixture just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready. If the dough doesn't hold together, add a little more water and pulse again.3 Remove dough from machine and place in a mound on a clean surface. Gently shape into 2 discs. Knead the dough just enough to form the discs, do not over-knead. You should be able to see little bits of butter in the dough. These small chunks of butter are what will allow the resulting crust to be flaky. Sprinkle a little flour around the discs. Wrap each disc in plastic wrap and refrigerate at least 1 hour, and up to 2 days.
4 Remove one crust disk from the refrigerator. Let sit at room temperature for 5-10 minutes in order to soften just enough to make rolling out a bit easier. Roll out with a rolling pin on a lightly floured surface to a 12-inch circle; about 1/8 of an inch thick. As you roll out the dough, check if the dough is sticking to the surface below. If necessary, add a few sprinkles of flour under the dough to keep the dough from sticking. Carefully place onto a 9-inch pie plate. Gently press the pie dough down so that it lines the bottom and sides of the pie plate. Use a pair of kitchen scissors to trim the dough to within 1/2 inch of the edge of the pie dish.
5 Add filling to the pie.
6 Roll out second disk of dough, as before. Gently place onto the top of the filling in the pie. Pinch top and bottom of dough rounds firmly together. Trim excess dough with kitchen shears, leaving a 3/4 inch overhang. Fold the edge of the top piece of dough over and under the edge of the bottom piece of dough, pressing together. Flute edges using thumb and forefinger or press with a fork. Score the top of the pie with four 2-inch long cuts, so that steam from the cooking pie can escape.

Valentine jam filled pie tarts

These were way easy, way fun and yummy! Kid friendly too!
**Adapted from Family Fun**

Ingredients
 Prepared piecrust
 Jar of strawberry jam
1 egg whisked with 1 teaspoon water

Frosting
2 ½ cups powdered sugar, sifted

1 tablespoon water
1 tablespoon softened butter
2 tablespoons light corn syrup
Sprinkles

Heat the oven to 400° and cover a cookie sheet with parchment paper.

On a floured surface, roll out the piecrust to a 1/8-inch thickness. Use a large heart-shaped cookie cutter (ours measures 4 inches wide) to make pairs of hearts, gathering the scraps and rerolling the dough as necessary.

For each tart, spread 2 teaspoons of strawberry jam on a heart, leaving a ½-inch margin on all sides. Brush the egg mixture around the edge before placing a second heart on top. Use the tines of a fork to seal the edges, then brush the tops with the egg mixture.

Bake the hearts on the prepared cookie sheet until their edges are just beginning to brown, about 15 minutes. Let them rest on the sheet a few minutes, then move them to a rack and let them cool completely.

Whisk the first four frosting ingredients in a medium bowl, adding more water a teaspoon at a time if needed to make a smooth, creamy frosting. Add a few drops of food coloring and mix until well blended. Spoon the frosting into a ziplock bag, snip off a corner, and squeeze it onto the tarts. Top with sprinkles.

Cowboy Cookies

Ingredients
2 cups old-fashioned rolled oats
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon cinnamon
1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
2/3 cup sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 cup chopped walnuts
X

Instructions
In a large bowl, stir together the oats, flour, baking soda, baking powder, salt, and cinnamon.

In a separate bowl, blend the butter and sugars with an electric mixer until smooth, about 2 minutes. Add the eggs and continue to beat until fluffy, about 1-1/2 minutes. Blend in the vanilla extract.

Using a wooden spoon, stir the dry mixture into the butter mixture one half at a time. Mix in the chocolate chips and walnuts. Refrigerate the dough for 1 to 2 hours.

Heat the oven to 350 degrees. Line a large, preferably light-colored baking sheet with aluminum foil, then grease the foil.

Using a scant 1/4 cup per cookie, shape the dough into balls and place them on the sheet about 2 inches apart.

Use your fingertips to flatten each ball to 1/3 inch thick. Bake the cookies on the center oven rack for 13 to 14 minutes, turning the sheet about halfway through. When they're done, the cookies should be very lightly browned and still look moist. Don't overbake them.

Cool the cookies on the baking sheet for 2 to 3 minutes, then transfer them to a wire rack. Makes about 2 dozen cookies.

Customizing Cowboy Cookies:
Add some variety to your cookie jar by replacing the walnuts and chips with different mix-in combinations:
Coconut Cowboy Cookies: 1 cup of flaked sweetened coconut, 2 cups of chocolate chips, and 1 cup of chopped walnuts.
Cranberry White Chocolate Cowboy Cookies: 1 cup each of white chocolate chips and dried, sweetened cranberries.
Peanut Butter Cowboy Cookies: 2 cups of peanut butter chips or 1 cup each of peanut butter chips and chocolate chips.
