Blackberry Spinach Salad

I love this salad especially the dressing. You could make the dressing and use on any salad.

6 cups fresh baby spinach
1 cup fresh blackberries
1 cup cherry tomatoes, halved
1 green onion, sliced
2 Tbsp. chopped walnuts, toasted (I used almonds)
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar
2-1/2 tsp. honey
1 garlic clove, minced (I left this out.)
1 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
2/3 cup crumbled feta cheese

1. In a large salad bowl, combine the spinach, blackberries, tomatoes, onion and walnuts.

2. In a small bowl, whisk the oil, vinegar, honey, garlic, mustard, salt and pepper. Drizzle over salad and toss to coat. Sprinkle with cheese. Serve immediately.
